Serving: 8 Popsicles
Time: 6+ hours
Ingredients:
- 2 cup frozen raspberries
- 1 whole lemon, juiced
- 3 tbsp maple syrup or sugar
- 2 cup vanilla yogurt
How to Make the Popsicles:
- In a food processor or blender, lightly pulse the frozen raspberries with lemon juice and maple syrup/sugar. Do not over mix. You still want to have little chunks of raspberry and not a puree.
- Grab your popsicle mold.
- Place a scoop of raspberry mixture at the bottom of the molds.
- Then, fill up the molds almost to the top with vanilla yogurt.
- Once almost filled, finish the mold with another scoop of the raspberry mixture.
- If desired, you can grab a spoon and lightly swirl the raspberry into the yogurt to create a prettier design.
- Lastly, place the stick into the popsicles and put the tray into the freezer.
- Recommend leaving in the freezer for at least 6 hours to properly harden.
