Time: 35- 40 minutes
Ingredients:
- 2 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 3 tbsp maple syrup
- 1 tbsp vanilla extract
- pinch of salt
- 1-1/2 tsp cinnamon
- 2 large eggs or 3 medium size eggs (separate the yolks from the whites)
- 1/2 cup of vegetable oil
- 2 cup butter milk or alternative milk product
- Add room temperature water if batter is too thick (optional)
Optional Toppings:
- Blueberries or other assorted fruits
- Pure maple syrup
- Butter or margarine
- Jams or marmelades
- Confectioners’ sugar
- Whipped cream
How to Make Waffles:
- Preheat your waffle iron, spray with cooking oil, and set aside while making the waffle batter.
- In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In another medium bowl, whisk your egg whites until stiff peaks form. This can take up to 5 minutes with a machine and up to 10 minutes by hand. After whipping, set aside.
- In a separate medium bowl, combine egg yolks, maple syrup, vegetable oil, butter milk, and vanilla extract.
- Once combined, add your egg mixture to the dry ingredients and mix well.
- Once well mixed, gently fold in your bowl of whipped egg whites. Gently folding the egg whites will help it not deflate in volume.
- With your preheated waffle iron, pour your newly made batter. You will need about 1/4 – 1/2 a cup of batter per waffle depending on your waffle machine. Do not overfill or else the batter will spill over and create a large mess.
- Cook for about 2-5 minutes depending on manufacturers recommendations.
- Once cooked, serve immediately with desired toppings. Enjoy!
