Ingredients:
- 1 1/2 lb. de-shelled, de-veined shrimp
- 2 tbsp extra virgin olive oil
- 2 medium zucchini (small diced)
- 4 cloves garlic, finely chopped
- 1 cup of fresh spinach, loosely chopped
- 1 small tomato, chopped
- 4 tbsp butter
- 3/4 cup white wine
- 1 tsp onion powder
- Pinch of salt
- 1 lb. linguine, cooked
- 1/4 cup pasta cooking water
- 2 tsp lemon zest, grated
- 3 tbsp chopped parsley (1 tbsp for garnish)

How to Make Shrimp and Zucchini Scampi:
- Cook the shrimp in olive oil for approximately 3 minutes or until cooked through.
- Once cooked, transfer shrimp to a plate and set aside.
- Put on a pot of water and boil. Add a pinch of salt and cook linguine for 5-7 minutes, then strain. Save 1/4 cup of the pasta water.
- While the pasta cooks, grab a skillet and add zucchini, tomato, garlic, butter, and spices.
- Cook mixture for about 5 minutes or until zucchini is almost ready.
- Add white wine, spinach, and salt. Cook for an additional 2 minutes to cook off alcohol.
- Next, add the linguine and shrimp into the vegetable mixture.
- Add 1/4 cup of pasta water, lemon zest, and parsley to the pot. Pasta water is a great way to lightly thicken the pasta sauce.
- Cook for an addition minute or two.
- Plate and garnish with leftover parsley and parmesan cheese. Enjoy!
