Time: 45-60 minutes
Ingredients:
- 2 lb of yellow or red skinned potatoes
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder or 1/2 cup diced onions
- 1 tsp cayenne pepper
- 1/2 tsp smoked paprika
- 2 tbsp freshly chopped or dried parsley
- 1 tsp freshly chopped or dried basil
- Salt and pepper to taste
- 1 chopped whole carrot (optional)
How to Make Roasted Potatoes:
- Preheat oven to 400-425°F depending on oven.
- Scrub potatoes thoroughly with water to rid of all excess soil.
- Keep the peel on and dice the potatoes into 1” cubes.
- After rinsing the potatoes, toss the pieces into a large bowl.
- Then add the olive oil, spices, fresh herbs, and the optional chopped carrot into the large bowel.
- Place the coated potatoes on a baking sheet lined with parchment paper for easier clean up.
- Bake for approximately 30-35 minutes until golden browned, crisped, and tender.
- Serve as a side dish and enjoy!
