Easy Oven Roasted Potatoes

Serving: 4-6 servings

Time: 45-60 minutes

Ingredients:

  • 2 lb of yellow or red skinned potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder or 1/2 cup diced onions
  • 1 tsp cayenne pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp freshly chopped or dried parsley
  • 1 tsp freshly chopped or dried basil
  • Salt and pepper to taste
  • 1 chopped whole carrot (optional)

How to Make Roasted Potatoes:

  1. Preheat oven to 400-425°F depending on oven.
  2. Scrub potatoes thoroughly with water to rid of all excess soil.
  3. Keep the peel on and dice the potatoes into 1” cubes.
  4. After rinsing the potatoes, toss the pieces into a large bowl.
  5. Then add the olive oil, spices, fresh herbs, and the optional chopped carrot into the large bowel.
  6. Place the coated potatoes on a baking sheet lined with parchment paper for easier clean up.
  7. Bake for approximately 30-35 minutes until golden browned, crisped, and tender.
  8. Serve as a side dish and enjoy!
