Serving: 6-8 medium size cakes

Ingredients:
- 2 cans of tuna (well-drained)
- 3/4 cup of bread crumbs
- 2 large eggs
- 2 tbsp fresh or dried parsley
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1 tsp lemon or lime juice
- 1/2 cup green onions (finely chopped)
- 1/2 cup of shredded parmesan cheese
- 2 tbsp olive oil
How to Make Tuna Patties:
- Start by draining both cans of tuna and placing it in a large bowl.
- In the same bowl, combine all other ingredients until well blended with a spoon.
- You can then lightly bread the patties in bread crumbs, but this is optional and not necessary.
- Heat up you frying pan or griddle to medium heat and add about 1 tbsp of olive oil to the pan.
- Once heated, form your patties and place them onto the nicely oiled pan.
- Fry each patty until golden brown on each side. This can take up to 10 minutes.
- Place all patties on a plate lined with paper towel to absorb any additional oil.
- Finally, serve your patties and enjoy in a sandwich or as a side to your meal. Enjoy!
