Classic Homemade Waffles

Serving: 8 waffles

Time: 35- 40 minutes

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 3 tbsp maple syrup
  • 1 tbsp vanilla extract
  • pinch of salt
  • 1-1/2 tsp cinnamon
  • 2 large eggs or 3 medium size eggs (separate the yolks from the whites)
  • 1/2 cup of vegetable oil
  • 2 cup butter milk or alternative milk product
  • Add room temperature water if batter is too thick (optional)

Optional Toppings:

  • Blueberries or other assorted fruits
  • Pure maple syrup
  • Butter or margarine
  • Jams or marmelades
  • Confectioners’ sugar
  • Whipped cream

How to Make Waffles:

  1. Preheat your waffle iron, spray with cooking oil, and set aside while making the waffle batter.
  2. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another medium bowl, whisk your egg whites until stiff peaks form. This can take up to 5 minutes with a machine and up to 10 minutes by hand. After whipping, set aside.
  4. In a separate medium bowl, combine egg yolks, maple syrup, vegetable oil, butter milk, and vanilla extract.
  5. Once combined, add your egg mixture to the dry ingredients and mix well.
  6. Once well mixed, gently fold in your bowl of whipped egg whites. Gently folding the egg whites will help it not deflate in volume.
  7. With your preheated waffle iron, pour your newly made batter. You will need about 1/4 – 1/2 a cup of batter per waffle depending on your waffle machine. Do not overfill or else the batter will spill over and create a large mess.
  8. Cook for about 2-5 minutes depending on manufacturers recommendations.
  9. Once cooked, serve immediately with desired toppings. Enjoy!
