Healthy Banana Pancakes

Serving: 1 dozen pancakes

Total Time: 20-25 Minutes

INGREDIENTS

FOR PANCAKES

  • 1 cup of all purpose flour
  • 1/2 cup of organic oats
  • 1/2 tsp cinnamon
  • 2-1/2 tsp baking powder
  • Pinch of salt
  • 1 banana (over-ripe)
  • 2 large eggs or 3 medium eggs
  • 2-1/2 tbsp maple syrup
  • 1 cup of almond or oat milk
  • 1/2 tsp vanilla extract
  • 2 tbsp of butter or margarine (melted)
  • Dark chocolate chips (optional)
  • 1 tsp of nutritional yeast (optional)

FOR SERVING (Optional)

  • Maple syrup
  • Sliced bananas
  • Chocolate spread
  • Confectioners’ sugar
  • Seasonal fruits

INSTRUCTIONS

  1. In a medium size bowl, whisk together the flour, oats, cinnamon, baking powder and salt.
  2. In an additional small bowl, mash the banana with a fork until almost smooth. Once the banana is smooth whisk in the eggs, maple syrup, milk, vanilla extract, and melted butter.
  3. Once combined fold the wet mixture gently into your dry mix with a rubber spatula until blended. At this point, you can add chocolate chips if desired. Try not to over-mix your batter.
  4. Turn on your griddle or non-stick pan to medium heat and wait till heat is well dispersed. Once heated, you can place a small dollop of butter or oil into your pan. Then, drop about 1/4 a cup of batter onto the cooking surface. Make sure to space each pancake at least an inch apart.
  5. Cook on one side until most bubbles are popped and then flip each pancake when the underside is golden brown. It should take about 2 minutes on each side.
  6. Once cooked, using your spatula, transfer the pancakes to a plate.
  7. Finally, enjoy your hard work and eat your pancakes with some yummy maple syrup, chocolate sauce or an assortment of fruit.
